The "Canestrato" cheese is a typical cheese from Basilicata, its name coming from the drying process that takes place in interwined baskets ("canestro" is the italian word for "basket").
It possesses a strong, sapid taste, with a clean flavor of sheep milk.
It pairs well with either red wines, aromatic honey, or again pear and milk mustard.
It can also flavor pasta or home made bread.
Sold in vacuum-sealed packages.
